Strawberry Granita

Ingredients

1. 1 pound of fresh ripe strawberries

2. ¼ cup of sugar

3. ½ cup of water

4. A squeeze of lemon

Directions

1. Wash and slice the strawberries.

2. Put them in a bowl and add a squeeze of lemon.

3. Sprinkle sugar on top and let it sit for about 20 minutes.

4. Put the strawberries in a blender and pulse a couple of times.

5. Taste for sweetness and add more sugar or lemon if needed.

6. Pour mixture into a shallow pan and put it into the freezer.

7. After about an hour, when the mixture has set a bit, use a fork to scrape and mix the ice crystals.

8. Repeat the freeze and scrape about every hour. Don’t worry if you forget. It will just be a little harder to scrape.

When it’s done, you’ll have mounds of ice flakes. You can transfer it to a resealable container and store it in the freezer for about a month. It never lasts that long in my house!
