Spicy Salmon Bowl
Ingredients:
½lb salmon, baked or grilled
2 cups of cooked farro
1 cup of arugula, chopped
1 Persian cucumber
4 cherry tomatoes, sliced
Gochujang Dressing:
2 tbsp gochujang
3 tbsp warm water
2 tbsp rice wine vinegar
2 tbsp olive oil
1 tbsp honey
1 tbsp soy sauce
1 tsp sesame oil
1 tsp minced ginger
Assemble Bowl:
Divide everything between two bowls.
Put farro in the bowl (this is your base).
Add arugula, cucumber, tomatoes.
Top with salmon.
Pour dressing on top
