Chickpea Salad & Radicchio Wrap

Ingredients:

1 can of chickpeas (be sure to drain and rinse them)

1 or 2 stalks of celery, chopped

2 scallions, chopped (white part only)

Small head of radicchio

Juice from ½ a lemon

2 tablespoons mayonnaise

1 teaspoon mustard

Salt, pepper and a dash of paprika

Optional add-ins: ½ red pepper, 1 dill pickle, 1 teaspoon sweet relish

Directions:

1. Put the chickpeas in a medium bowl and mash them with a fork or a potato masher.

2. Add the chopped celery, chopped scallion and any add-ins.

3. Mix in mustard, mayo and lemon juice.

4. Season with salt, black pepper and paprika.

5. Separate 2 to 4 radicchio leaves and fill them with the chickpea salad

6. Wrap leaves loosely and enjoy.
