Greek Salad & Feta Cheese on Grilled Bread

I love this recipe and if like salads you’ll love it too! It’s great at the end of August when the Farmer’s Market is overflowing with tomatoes. It’s like having a Greek Salad sandwich only better. Have it for lunch or dinner. Serves 4.

Ingredients:

Dressing:

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 tablespoon minced oregano leaves

1 garlic clove, minced

6 tablespoons olive oil

Salt & pepper to taste

Salad:

1 head of lettuce torn into bite sized pieces (about 12 cups)

2 cups of cherry tomatoes

18 kalamata olives, pitted & quartered

7 ounces of feta cheese, crumbled

Grilled Bread:

8 slices of rustic bread (2 slices per person)

2 tablespoons olive oil

Directions:

Dressing

1.     Whisk together the vinegar, lemon juice, oregano, garlic, salt & pepper.

2.     Whisk in the olive oil until the mixture is smooth

Grilled Bread

1.     Light the grill or turn on your broiler.

2.     Brush both sides of the bread with olive oil and sprinkle with salt.

3.     Grill or broil for about 2 minutes turning once.

Salad

1.     Add the lettuce, tomatoes, and olives to a bowl.

2.     Add the dressing and toss until evenly coated.

3.     Add the feta cheese.

To Serve

1.     Place 2 slices of toasted bread next to each other on an individual plate.

2.     Divide the salad among the plates, piling it high.

3.     Serve immediately.
