Cantaloupe Cucumber Soup

Easy and refreshing. Perfect for the last days of summer. This makes about 5 cups and takes no time to make although you do have to chill it for a couple of hours.

Ingredients:

6 cups of cantaloupe (I used I small very ripe one)

½ cup almond milk or you plant milk of choice

2 Tbsp lime juice

½ tsp grated fresh ginger

½ cup chopped seeded cucumber (one small)

Salt to taste

2 Tbsp snipped basil

 

Directions:

1.     In a blender combine cantaloupe, almond milk, lime juice and ginger until smooth.

2.     Add cucumber and continue to blend.

3.     Season with salt and stir in basil.

4.     Cover and refrigerate for about 2 hours.

5.     Serve with more basil and cucumber.
