Blackberry Parfait

You want to make a delicious dessert that is quick and easy and looks great. I’d say go for a Blackberry Parfait. This one has been lightened up by substituting some of the whipped cream with yogurt. The other nice thing is that this recipe can be doubled easily. It serves 2 but if you have a party of 4, just double everything.

Ingredients:

1 cup of plain Greek yogurt

¼ cup of whipping cream

½ teaspoon vanilla extract

2 tablespoons of maple syrup (divided)

1 ½ cups blackberries

Mint leaves for garnish if desired

Directions

1. In a bowl, combine the Greek yogurt, whipping cream, vanilla extract, and half of the maple syrup. Using a hand mixer, whip the mixture on medium speed for two to three minutes or until light and smooth.

2. Crush the blackberries using a fork. Stir in the remaining maple syrup and mix well.

3. Layer the crushed blackberries and whipped yogurt in a small dessert bowl or a glass. Swirl the layers gently with a knife to create a marbled effect.

4. Garnish each bowl with blackberries and fresh mint. Enjoy!
