Sweet Potato Stew with Greens

A hearty and slightly spicy and very tasty stew that is one of my favorites. Top it with crushed peanuts if you like. And serve it over quinoa for an extra boost of protein. Serves 4

 

Ingredients:

2 tablespoons olive oil

1 medium onion finely chopped

2 teaspoons fresh grated ginger

2 to 3 cloves of garlic, crushed

1 red pepper chopped

2 sweet potatoes, peeled and cut into ½” cubes

1 teaspoon cumin

½ teaspoon turmeric

¼ teaspoon cinnamon

1 teaspoon smoked paprika

½ teaspoon oregano10 oz can diced tomatoes with green chilies

10 ounces of vegetable stock

3 ½ ounces of chopped greens (kale or Swiss Chard)

2 tablespoons creamy peanut butter1 tablespoon apple cider vinegar

 

Directions:

1.     Heat olive oil in a large skillet.

2.     Add onions and cook for about 10 minutes or until soft.

3.     Then add in ginger, garlic, and pepper.

4.     Cook for about 2 minutes and add the sweet potatoes and all the spices + oregano.

5.     Stir in the can of tomatoes and the vegetable stock.

6.     Cover and cook until the sweet potatoes are soft.

7.     Add the greens and cook until they are wilted.

8.     Add salt & pepper to taste and enjoy!
