Cornmeal Porridge with Cranberries & Almonds

Hot cereal or porridge is the perfect comfort food, especially on a cold winter morning. This can also be made with barley or millet. It’s a great way to add grains and fiber to your diet. This serves 2 but can easily be doubled.

Ingredients:

½ cup of cornmeal (polenta) or other grain

¼ cup of dried cranberries (raisins can be substitutes)

¼ cup of slivered almonds (It’s nice to toast them)

½ tablespoon of butter

2 tablespoons honey

1/1/4 cups of water

 

Directions:

1.     Bring water to a boil and carefully pour in the cornmeal, whisking as you pour.

2.     Reduce the heat and let it simmer for 10 minutes, stirring occasionally to prevent sticking.

3.     Stir in the cranberries. Cover and continue cooking for about 10 minutes.

4.     If the mixture becomes too dry, add water or milk (nondairy milk is fine.)

5.     When the cornmeal is tender, stir in the almonds, honey, and butter.

6.     Serve with milk and enjoy!
