One-Pot Pasta Primavera with Shrimp

Ingredients

12 ounces of short pasta (penne or fusilli)

4 garlic cloves, thinly sliced

1 tsp of kosher salt

1 tsp black pepper

1 (10 ounce) bag of frozen broccoli florets

6 ounces of green beans, trimmed

8 ounces of large shrimp (peeled and deveined)

1 pint cherry tomatoes, sliced in half

1 cup of frozen green peas

3 tablespoons of unsalted butter

1 tsp lemon zest

¼ cup of grated Parmesan cheese

Red pepper flakes (optional)

Directions

1.     Put the pasta in a large pot.

2.     Add the garlic, salt, black pepper, and 3 ½ cups of water.

3.     Cover and bring to a boil.

4.     Once boiling set the timer for the time the pasta needs to cook according to the package.

5.     When there are 5 minutes remaining, stir in the broccoli and green beans.

6.     Cover the pot and bring everything to a boil again. If the pasta starts to dry out add another ½ cup of water.

7.     When 2 minutes remain, stir in the tomatoes, shrimp, peas and butter.

8.     Cook for another minute.

9.     Remove the pot from the heat and stir in the lemon zest and the Parmesan.

10. Add additional salt & pepper if needed.

11. Divide among 4 bowls and enjoy!
