Berry Beet Smoothie Bowl

Sometimes you feel like a smoothie and sometimes you want to eat your smoothie with a spoon. This smoothie bowl is perfect for when you’d rather eat your smoothie than drink it. If you want to turn this into a drinkable smoothie just add a little more liquid. And speaking of adding, you can add protein powder, or vanilla and feel free to change up the berries. Make it yours!  (makes 2 servings)

Ingredients:

1 medium beet (peeled and diced)

1 cup frozen mango

1 cup frozen raspberries

2 pitted dates

1 cup unsweetened almond milk

 

Directions:

1.    In your blender or food processor combine all the ingredients and blend until smooth and thick.

2.    Top it with your choice of blueberries, mangoes, raspberries, or shredded coconut.

 

Notes:

You can steam the beet before adding it if you don’t like raw beets.

If you want to turn this into a small, increase the almond milk to 1 cup.

You can substitute any other type of milk if you don’t like almond milk.
