Tomato & Olive Quiche

I got this recipe from my sister, and it’s become a staple. TI love it because I can have it for breakfast, lunch or dinner. It also is nice to serve for brunch. It comes together in about 40 minutes and you probably have all the ingredients in your pantry.

Ingredients:

2 onions

1 clove garlic

1 can of crushed tomatoes

¼ cup of parsley

¼ tsp of thyme

2 cups shredded Swiss cheese

3 eggs

½ cup of black olives

1 premade pie crust (I like the Pillsbury. They come 2 to a package).

 

Directions:

1.     Saute onions, add garlic, add tomatoes, parsley, thyme and salt & pepper to taste.

2.     Put pie crust into a dish and sprinkle with cheese.

3.     Beat eggs and add tomato mixture to the eggs.

4.     Fold in olives

5.     Pour mixture over the cheese.

6.     Bake on the lowest rack at 450 for 10 minutes.

7.     Reduce heat to 350 and continue baking for another 25 to 30 minutes or until firm.
