Muhammara – Red Pepper Walnut Dip

Ingredients:

2 red peppers

2/3 cup breadcrumbs (I use Panko)

2 cloves of garlic

1 tablespoon lemon juice

1 tsp cumin

¼ tsp allspice

¾ cup olive oil

1 cup of walnuts

½ tsp red pepper flakes (more or less to taste)

1 ½ tablespoons pomegranate molasses

PS: You can find pomegranate molasses in specialty food stores and Eastern Markets. Whole Foods also carries it. If you can’t find pomegranate molasses you can use lemon juice and honey. It should be tangy sweet.

Directions:

1.    Put the red pepper under the broiler. When they are charred let them cool and then peel them. (You can use jarred red peppers if you prefer)

2.    Put the peeled red peppers in a food processor. Then add everything else to the processor. Process everything until blended.

3.    Adjust the seasoning to taste.
